Add weight of product to labels.-thermometers available-3 compartment sink and test strips available-sanitizer bucket at 200 ppm quat; wiping cloths properly stored-chemicals labeled and properly stored-dry storage ok-restrooms clean and stocked-dumpster ok-discussed employee health - ensure anyone with gastrointestinal symptoms (vomiting / diarrhea) is excluded for 48 hours after symptoms stop.

[2] Food protected during storage; preparation; display; service; transportation Observed finished candies stored in freezer under potentially hazardous food. If freezer stopped functioning (ie - during a power outage) ready to eat food has potential to be contaminated by chicken. Facility has shelves assigned to different operators. Work with facility owner to arrange shelves so all ready to eat food is stored on the top and potentially hazardous food on the bottom.
