    Observation: The scrambled eggs and hash brown potatoes were not reheated to 165F within 2 hours to eliminate pathogenic bacteria.

    Observation: Temperature controlled foods in display refrigerator cold holding at improper temperatures.

    Observation: Sushi rice for which time rather than temperature is being used as a control was not labeled or otherwise marked with a 4 hour cook, serve or discard by time.
    Correction: Discard food that is not cooked and served or served if ready-to-eat within 4 hours from the point in time when the food is removed from temperature control. Clearly label or otherwise mark the food with a 4-hour cook-serve or serve by time.

    Observation: The temperature measuring devices in the low boy refrigerators were not properly located in the warmest part of the unit.
    Correction: Relocate the temperature measuring device to the warmest part of the refrigeration unit to properly represent the ambient air temperature.

EHS received an email from the Certified Food Manager, Chris Costa, to confirm that the Hobart tech had properly fixed the temperature on the dishmachine.

Observation discussed with PIC. Dishmachine will not be used to sanitize until company has repaired it to reach between 180 degrees F to 194 degrees F. Manager will be contacting EHS when it is fixed. Observed facility in great sanitary condition!

    Observation: The water temperature in the manifold servicing the high temperature ware wash machine was above the maximum allowable level of 194ºF. The thermometer read 199 degrees F.
    Correction: Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils.
