Generally, facility observed to be clean and well ordered. Hot water dishwashing machine appeared to be sanitizing effectively-wax tape melted and turned black. Good food temperatures observed throughout the flow of food.
  • Handwashing - Using a Handwashing Lavatory (corrected on site)
    Observation: The handwashing facility located at the service area is blocked, preventing access by employees for easy handwashing. A bottle of shake mix was stored there.
    Correction: Access to the handwashing facility identified above is to be available during all hours of operation. Remove the @EQUIPMENT@ preventing its use.

Operator agreed to fill potentially hazardous foods at salad bar only to chill line to ensure proper temperature maintenance. Generally, facility observed to be clean and well ordered. Staff knowledgeable about employee health policy-had just completed inservice training for staff. Quaternary ammonia sanitizer at proper concentration of 200ppm. Wax tape melted and turned black when tested hot water sanitizing dishwashing machine-appeared to be operating properly.
  • Equipment - Cutting Surfaces
    Observation: The cutting board(s) along the sandwich prep unit are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
    Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.

Hot water sanitizing dishwashing machine operating within required standard-wax tape melted/turned black. Reviewed norovirus prevention protocol.

Good hand hygiene and handwashing practices observered. Hot water sanitizing dishwasher operating within required parameters-wax tape melted and turned black.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) (repeated violation)
    Observation: Raw fish cold holding at improper temperatures in refrigerated drawers at grill area. Appeared unit was not stocked to facilitate cold holding--containers missing in top of unit.
    Correction: Put pan in top to fill in gap and refrigeration unit was brought down to 38oF and is now capable of maintaining food storage at 41°F or below.
