    Observation: Noted 2 raw burgers at 44 F in unit on top next to grill
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.
  • Critical: Time as a Public Health Control* (corrected on site)
    Observation: Noted burgers under time control that came out at 10 am and time control was labeled as 3 pm. 5 hours not 4 . Corrected on site changed to 2 pm
    Correction: Discard food that is not cooked and served or served if ready-to-eat within 4 hours from the point in time when the food is removed from temperature control. Clearly label or otherwise mark the food with a 4-hour cook-serve or serve by time.

    Observation: Noted burger meat in walk in cardboard container at 45 F needs to be 41 F . appears walk in door left open burgers out of temp. The burgers were moved on to the line checked at 53 F. Using only burgers at 41 F. (bottom layer) Burger meat moved to freezer to cool down quickly.
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.

    Observation: Noted Some pans put ud dirty on shelf over 3 comp sink. Noted greasy feel on it. Not properly cleaned. All pans moved to be recleaned. .
    Correction: Clean and sanitize these surfaces for food contact.

    Correction: Replace bulbs.

Talked to manager of complaint . Manger knew of complaint of bug in salad said as son as customer called she checked the salads and found nothing but discarded it and made new salads. Noted saw no bugs i facility. Possibility bugs may have flown in the customer order window while salads were being made.
