Complaint of sewer backup from anonymous source. Noted odor when walking in the facility. seems confined in the dining area on odor in the kitchen . Maybe from the open drain in the bathrooms maybe men's room. all toilets flush and handsinks and 3 comp sinks drain with no back ups seen. manager had already contacted plumber on 11 19, 2013 saw receipt from Mike Wilson plumbing 12/02/2013. Grease trap pumped out by green light Biofuels. Saw 2nd receipt Pit Crew called as per manger to locate smell.

Noted manual 3 comp sink with a qt 40 sanitizer at 150 ppm needs to be 200 ppm repair / adjust the switch of the sanitizer dispenser if necessary if necessary dilute to 200 ppm . Manger to provide manufacture statement that 150 Ppm is an appropriate use. Otherwise it would be a violation.

    Observation: Ice machine cover is rusted and worn and repaired with duct tape, cannot be cleaned. repair or replace.
    Correction: Remove this item from the facility and replace with an approved unit as needed. Equipment and utensils must be capable of maintaining their original characteristics in order to be easily cleaned and to prevent contamination of food.

Don't store single service items or packaged food under the soap and sanitizer dispensers at the handwash station may drip on the those items when hands washed.

    Observation: The interior surfaces of the mechanical warewashing machine are soiled with limescale, that may decrease the effectiveness of the unit.
    Correction: Increase the frequency of cleaning or limescale deposit removal from the interior surfaces of the unit to maintain unit performance.
  • Non-Food Contact Surfaces
    Observation: The nonfood contact surface of the racks used to hold the dishes and spoons to be run through the dish machine is old and worn stains/ derbies on them. remove/repair/replace/clean
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
