  • Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness* (corrected on site)
    Observation: Chlorine sanitizing solution used was not at an acceptable concentration, not detected.
    Correction: Adjust the chlorine sanitizing solution to a level of at least 50 to 100 parts per million. Replaced cap and primed chlorine sanitizing solution, verified chlorine solution concentration at 50ppm.

  • Critical: Reheating for Hot Holding* (corrected on site)
    Observation: The prepared soups were not reheated to 165F within 2 hours to eliminate pathogenic bacteria. Potato soup was only 91 F and shrimp bisque was only 61 F in hot holding unit.
    Correction: Rapidly reheat food for hot holding to 165°F or above within 2 hours. Soups placed back on stove and reheated during inspection.
  • Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking* (corrected on site)
    Observation: The ready-to-eat (RTE) commercially processed sliced meats in the refrigeration unit were not properly dated for disposition after opening.
    Correction: Mark a "consume by" date on commercially processed RTE foods at the time the original container is opened. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria. PIC will make sure these foods are date marked.
  • Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking* (corrected on site)
    Observation: The prepared ready-to-eat (RTE) rice, spaghetti noodles etc. in the refrigeration unit is not properly dated for disposition.
    Correction: Mark the name and "consume by" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
  • Critical: Food - Consumption of Raw or Undercooked Animal Foods
    Observation: The raw and/or undercooked foods provided on the menu, menu board, table tent or brochure do not provide a disclosure statement. Hamburger may be undercooked. There is no asterisk or mention by the hamburger that it may be cooked to order. There is a reminder statement at the bottom of the menu but it does not refer to anything.
    Correction: The Consumer Advisory shall include a disclosure statement that includes a description of the animal-derived foods and identification of the animal-derived foods by astericking (*) them to a footnote that states that the items are served raw or undercooked, or contain raw or undercooked ingredients. Redo the menus with an asterisk and state that hamburger may be cooked to order. Asterisk needs to be by the hamburger and by the reminder statement at the bottom of the menu.
  • Critical: Equipment and Utensils - Before Use After Cleaning* (corrected on site)
    Observation: The food-contact surfaces of the following equipment were not observed sanitized: dishes being run through the dishwasher. No measurable chlorine sanitizer on dishes.
    Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use. Chlorine was not being pumped into dishwasher. Tubing was not done in the sanitizer container so after correcting this this the dishwasher dispensed chlorine correctly.
  • Equipment, Utensils, Linens, and Single-Service and Single-Use Articles (corrected on site)
    Observation: Single service items observed unprotected from contamination. Straws unwrapped in bar area.
    Correction: Store single service items in its original protective packaging or inverted in an approved dispenser. Provide wrapped straws at the bar.
