TCS foods were removed from the 2 door staging refrigerator until at proper temperature is maintained. Floor in ware washing room continues to erode onto the bottom portion of equipment surfaces. PIC will continue to monitor PSI on ware washing machine for proper function. PIC will design the proper system for maintaining TCS food safe during display at the deli room serving line. Reviewed food safety information and proper cooling systems with PIC.
