  • Critical: Package Integrity* (corrected on site)
    Observation: There were 2 cans of baby corn, one can of bamboo shoots, and one can of water chestnuts that had dents on can top seams, but were being stored at same shelf location as cans intended for service to customers.
    Correction: Cans with dents in top, bottom, or side seams may not be used for service to customers. Cans with dents in seams need to be separated from canned foods intended for service to customers, as soon as canned foods deliveries arrive. Cans with dents in seams may be kept in a special area for "damaged cans only." There must be a sign posted to designate this special area, saying "damaged cans only (the sign can be hand written). The damaged cans may be kept until they can be returned to supplier for reimbursement. Or they may be discarded. This violation was immediately corrected by the establishment management.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Diced spring onions were out of temperature in plastic cup being stored on top of pan of cooked chicken, and pan of cooked pork, on top of cold food prep bar. The diced spring onions in the plastic cup were at 67 F.
    Correction: Potentially hazardous foods, including cut or diced onions, may not be stored in cups, on top of the steel pans of the cold foods, in the top area of the cold food prep bar. The food in the cups is not in good contact with the cold elements, and therefore can not be maintained at the proper storage temperature, of 41 F, or lower. We suggest that the plastic cups of foods such as diced onions be stored in a tub of ice water. This way they can be maintained at the proper temperature. This violation was immediately corrected by the establishment management.

  • Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils* (corrected on site)
    Observation: One of the choppers on the magnetic strip storage rack had visible vegetable debris on it.
    Correction: Only clean utensils may be placed on the magnetic strip rack. All of the utensils, and the magnetic strip itself, were immediately washed, rinsed, and sanitized, at our request. This corrected the violation.
