This was a routine inspection. Food contact surfaces and nonfood contact surfaces were noted to be visibly cleaned, Food temperatures were within acceptable temperature limits. The quaternary ammonium compound sanitizer concentration at the 3-compartment sink was checked and observed to be acceptable at, 200 ppm. However, it was noted that the shared dumpster area is in need of cleaning. Several cardboard boxes and refuse were on the ground. Additional. The problem was also discussed with the other that is sharing the dumpster and has agreed to resolve the problem. It was also recommended that an additional dumpster for cardboard recycling or for refuse be obtained to prevent overflow and creating unsanitary conditions.

Observation: Outside refuse container was uncovered.
Correction: Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered with tight fitting lids or doors if kept outside the food establishment.

Observation: Trash and litter were observed adjacent to the refuse container outside the facility. Cardboard boxes were observed on the ground within the fence.
Correction: A storage area and enclosure for refuse, recyclables, and returnables shall be maintained free of unnecessary items and kept clean.

Observation: Unlabeled food containers with flour that is not easily identified by appearance were noted.
Correction: ALL food and ingredients removed from their original container and stored in other food containers, squeeze bottles or "shakers" shall be labeled properly using the common name of the food (if the food or ingredient is not easily distinguished). For example, all cooking oils, salt, sugar, flour, starch, spices, herbs, etc. shall be labeled. (both containers were properly labeled during the inspection).

Observation: Encrusted food deposits and/or other soil deposits were observed on the food contact surfaces of the can opener blade and holder
Correction: Clean the can opener daily to prevent accumulation of residue and other debris prevent food contamination.

Observation: The exterior surfaces of the hot water heater were observed soiled with an accumulation of dust, dirt, or other debris:
Correction: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue and other debris to maintain a sanitary work environment and prevent pest attraction. Clean the top of the hot water heater more frequently to prevent dirt build-up.

Observation: The in-ground grease trap is not properly sealed to prevent strong odor in the facility.
Correction: Seal any gap on or around the grease trap to prevent odor from sipping out creating an unsanitary condition.

The purpose of today's visit is to conduct a routine inspection. Water heater: AO smith BT-80-230 which uses 75,000 BTU Dish machine: n/a
- Critical: Certified Food Manager/Presence Required (corrected on site) (repeated violation)
Observation: There is no Certified Food Manager present at the beginning of the inspection.
Correction: It shall be unlawful to operate a food establishment unless it is under the immediate control of a certified food manager. It is highly suggested that you have more than one employee with the food manager's license. ORS Interactive, Inc. (see handout provided) issues the required photo identification card with proof of successful completion of a certified food manager's exam. Failure to have a certified food manager on site during ALL hours of operation including food preparation, food service, and cleaning/sanitizing of equipment/utensils will result in closure of the establishment.
