Establishment with an adequate metal food stem thermometer & quaternary test kit. The three vat sink & wiping cloth/sanitizer set-ups were adequate. Adequate employee health policy in place. Health permit posted & visible. Note: Monitor walk-in cooler & make-table for an adequate product holding temperature of 41 degree Fahrenheit or below. When walk-in cooler door is opened a big rush of warm air enters. Product temperature fluctuations were found in the walk-in cooler & the make-table.
  • Good Repair and Calibration of Thermometers
    Observation: Observed food thermometer is not calibrated to ensure accuracy.
    Correction: Calibrate food thermometer according to manufacturer's specification as necessary to ensure accuracy.

    Observation: Food employee observed handling deli meats with bare hands during inspection.
    Correction: DISCARDED, HANDS WASHED, HANDS GLOVED. The use of gloves, utensils, and/or deli tissue shall be used when handling ready-to-eat foods to prevent potential cross-contamination.
  • Cloths - Wiping Cloths - Use Limitation (corrected on site)
    Observation: No quatnary ammonium sanitizer available at the time of inspection.
    Correction: PIC SET-UP QUAT SANITIZER 200-400 PPM AT TIME OF INSPECTION. Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.
  • Toilet Room Receptacle Covered (repeated violation)
    Observation: There is no covered refuse container for the disposal of feminine napkins in the ladies room stall.
    Correction: INSTALL REFUSE CONTAINER WITH LID. Install a covered refuse container for the disposal of feminine napkins in the ladies room stall.

    Observation: Toilet room door is not tight fitting. and/or provided with a self- closing door
    Correction: INSTALL SELF-CLOSURE FOR EMPLOYEE RESTROOM DOOR. Completely enclosed toilet facilities minimize the potential for the spread of disease by the movement of flies and other insects between the toilet facility and food preparation areas.
  • Outer Openings - Protected
    Observation: The exterior outer openings to the rear kitchen door are not completely enclosed along the bottom of the door.
    Correction: COMPLETELY ENCLOSE REAR KITCHEN DOOR BY INSTALLING A DOOR SWEEP. All exterior outer openings shall be completely enclosed to prevent the potential entry from unwanted pests.
