    Observation: The faucet for cold running water observed broken.
    Correction: Repair and maintain all plumbing components and fixtures.

    Observation: A sign or poster that notifies food employees to wash their hands is not provided at all lavatories in restrooms used by food employees.
    Correction: Provide a sign or poster that notifies food employees to wash their hands at all handwashing lavatories used by food employees.

  • Critical: Food - Potentially Hazardous Food - Cold Holding*
    Observation: Chicken and beef cold holding at improper temperatures at 44 degrees F in 2 door low boy refrigerator. Said unit not holding potentially hazardous food at adequate temperature <41 degrees F.
    Correction: Operator voluntarily relocated said food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
  • Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking*
    Observation: The prepared ready-to-eat (RTE) food in the refrigeration unit is not properly dated for disposition in that Gumbo and Chilli in reach in refrigerator observed without proper datemarking in reach in refrigerator.
    Correction: Mark the name and "consume by" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

    Observation: Observed accumulations of mildew in inner panel of ice machine.
    Correction: Clean and sanitize these surfaces for food contact.

    Observation: The food-contact surfaces of the plates and utensils were not observed sanitized after cleaning (wash and rinse) in that the dishwasher not sanitizing after wash and rinse cycle.
    Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use.
  • Handwashing Lavatory, Water Temperature, and Flow
    Observation: Handwashing facilities in kitchen and server stations observed without hot and cold running water.
    Correction: Hot and cold running water must be provided in all handwashing sinks.

    Observation: Premises are not being routinely inspected for evidence of pests in that several fruitflies observed in dishwashing area.
    Correction: Inspect premises on routine basis for the evidence of pests. . Insects and other pests are capable of transmitting disease to man by contaminating food and food-contact surfaces.

    Observation: Meat slicer and can opener observed dirty with old food accumulation.
    Correction: Operator voluntarily cleaned said surfaces.
  • Critical: Equipment and Utensils - Before Use After Cleaning* (corrected on site)
    Observation: The food-contact surfaces of the following equipment were not observed sanitized: in that the chemical dishwasher was not sanitizing the plates and utensil after being clean as when tested with test strips no change in color was observed.
    Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use. Operator voluntarily set up the three compartment sink for wash, rinse and sanitize to use till the dishwasher is repaired.
  • Handwashing Cleanser - Availability
    Observation: Running cold water not provided making in difficult to wash hands adequately in bar area and server station.
    Correction: Provide hot and cold running water in all handwash sinks.
  • Handwashing Cleanser - Availability
    Observation: Soap was not provided at the hand washing lavatory in the kitchen.
    Correction: Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.Operator voluntarily provided soap. (Corrected)

    Observation: Fruitflies observed in kitchen, dry storage area next to handwash sink and in bar area.
