    Observation: The following prepared ready-to-eat (RTE) foods in the refrigeration unit are not properly dated for disposition: 1) beef 2) chicken salad 3) pork
    Correction: Mark the name and "consume by" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

Discussed the following with the PIC:
1. All equipment, utensils, food containers, RIC's and RIF's must be cleaned and sanitized before opening.
2. Remove nozzles from Coke machine and wash, rinse and sanitize.
3. Obtain chlorine bleach and test strips to sanitize.
4. Obtain thin probe food thermometer.
5. All hand sinks must have soap, paper towels and signs informing employees to wash hands.
6. Clean all shelving and sinks.
7. Entire facility must be cleaned before final inspection.
8. Have all refrigeration turned on for final inspection, temperatures will be checked.
9. You must have the occupancy permit before health permit can be issued.
