The facility was not open for the season at the time of inspection. The facility will open the weekend of May 23, 2015. The reach-in cooler and reach-in freezer were not turned on at the time of inspection. The EHSS needs to verify that the units are working properly prior to issuing the health permit. The units need to be on and operating at the required temperatures at the follow-up inspection. All equipment and utensils from this facility are cleaned and sanitized in Denny's kitchen located in the same building. The menu consists of pizza, subs, and salads (prepared in Denny's kitchen).

Facility is open seasonally from 5:00 PM - 9:00 PM No food prep observed. Equipment and utensils are taken to Denny's kitchen to be cleaned and sanitized.

Observation: Hand sink cabinet and leg of prep table was observed in a state of disrepair and damaged.
Correction: Repair the equipment to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the equipment, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

Observation: The following equipment food-contact surfaces were observed soiled to sight and touch: knives, pizza cutter, tongs. PIC took items to be cleaned.
Correction: Clean and sanitize these surfaces for food contact.

Observation: The nonfood contact surface of the bottom of the reach in cooler has accumulations of grime and debris.
Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

Observation: Coving missing along wall near hand sink
Correction: Cove floor wall juncture to no larger than a 1/32 inch space.
- Handwashing Cleanser - Availability (corrected on site)
Observation: Soap was not provided at the hand washing lavatory. Provided.
Correction: Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.
- Hand Drying Provision (corrected on site)
Observation: No disposable towels were provided at the hand washing lavatory. Provided.
Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials
- Physical Facilities - Cleaning Frequency and Restrictions
Observation: Floor underneath refrigeration unit is noted in need of cleaning.
Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

Observation: Chemical spray bottle observed without a label. PIC voluntarily discarded spray bottles.
Correction: Label spray bottles with contents or discard.
