Correction: Employees may drink from a closed beverage container if the container is handled to prevent contamination of (1) The employee's hands (2) The container and (3) Exposed food clean equipment, utensils, and linens and unwrapped single-service and single-use articles.

Observation: The prepared ready-to-eat (RTE) beans in the refrigeration unit was not discarded by the ""consume by"" date.
Correction: Discard the food at this time and ensure all prepared RTE food is served, sold or discarded by the ""consume by"" date. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

Kitchen not in use during inspection. Potentially hazardous food products cannot be stored in walk in refrigerator if unable to maintain 41F or below. Kitchen undergoing repair work and not in use. Operator to call for reinspection prior to operation.

Observation: The walk in refrigerator is in poor repair and not maintaining 41F or below.
Correction: Repair or replace the walk in refrigerator and ensure not utilized for storage of temperature controlled food products unless able to maintain 41F or below.
- Warewashing - Mechanical Warewashing Equipment, Wash Solution Temperature
Observation: The wash temperature of the high temperature sanitizing ware wash machine is not meeting the manufacturer's specifications. The minimum temperature was 150F while the actual temperature was 106F
Correction: Discontinue the use of the ware wash machine until it is working properly. Initiate manual wash, rinse, and sanitize method to properly clean equipment and utensils. To minimize workload you can move to all single service utensils.
