    Observation: No parasite destruction records maintained for raw, raw marinated, partially cooked or marinated-partially cooked fish that are served or sold in ready-to-eat form.
    Correction: Obtain a written agreement or statement from the supplier stipulating that the fish supplied are frozen throughout to a temperature of -4°F (-20°C) for 168 hours (7 days) in a freezer or at -31°F (-35°C) for 15 hours in a blast freezer.
  • Equipment - Good Repair and Proper Adjustment
    Observation: Lowboy refrigerator was observed in a condition that prevents necessary maintenance and easy cleaning (leaking).
    Correction: Repair the refrigerator to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the refrigerator, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

This is follow-up to kitchen fire on Saturday night. Fire department extinguished fire with powder. Restaurant was closed all day Sunday for extensive clean-up. Operator had discarded open containers of food, single service items, spices, etc. He said every surface in the kitchen was washed. Walk-in refrigerators/freezers had been taped shut. No evidence of powder extinguisher was observed in kitchen , walk-ins, refrigerator, etc. Advised restaurant may re-open for business at this time provided all other required inspections have been completed. Fire was on flat top griddle and confined to this one area of kitchen.

    Correction: Repair or replace the refrigerator to ensure food items are held at the proper cold holding temperature of 41°F or below . Improper food storage temperatures are a major contributing factor to foodborne illness.

    Observation: Blade of the food processor, exterior of the dough mixer, floor(s) of walk in refrigeration unit(s) were, trash cans observed in a condition that prevents necessary maintenance and easy cleaning.
    Correction: Repair the items to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the items, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

    Observation: Unused or non-functioning equipment not removed from the premises. (Refrigeration unit)
    Correction: Remove any unused or non-functioning equipment from the premises.

    Observation: The can opener blade is rusted and dull.
    Correction: Disassemble the can opener, clean and sanitize the assembly, remove and replace the blade. Can opener blades must be kept sharp to prevent creation of metal fragments that can contaminate food in the can when opened.

    Observation: Trash and litter were observed adjacent to the refuse container outside the facility. (*landscape beds)
    Correction: The refuse container storage area and grounds adjacent to the container are to be maintained clean and sanitary.

    Observation: Outer opening of the food establishment is not protected against entry of insects and rodents. (Downstairs storage area/*Golf cart entrance side) (Upstairs kitchen outside entry door *Sweep on inside of door)
    Correction: Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.

    Observation: Walls under dish machine/floor drains in the kitchen noted in need of cleaning.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
