Discussed employee health with the kitchen manager. The kitchen manager is knowledgeable about when to restrict and exclude sick staff. Temperature controls are in place.

Generally, facility observed to be clean and well ordered. Foodborne illness risk factors appeared to be well managed. Food observed to be at proper temperature throughout the food flow. Good handwashing, glove use and knowledge of employee health policy observed. New dishwasher appeared to operating properly--chlorine sanitizer residual at concentration of 75 ppm.
  • Equipment - Cutting Surfaces
    Observation: The white cutting board was scored and stained. The food contact surface is no longer easily cleaned and sanitized due to condition.
    Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.
  • Physical Facilities in Good Repair
    Observation: Floor tiles in kitchen are not maintained in good repair
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities. Repair/replace floor tiles so smooth and easy to clean.

Operator was knowledgeable about employee health policy. Reviewed Norovirus prevention protocol and left handout. Operator will check reheat temperatures of commercially processed foods to ensure internal temperature reaches at least 135oF and check food temperatures stored in refrigerator to ensure food maintained cold at 41oF or below. Operator does not utilize raw meats in this facility nor cool any leftover foods.
  • Temperature - Food Temperature Measuring Devices - Provided
    Observation: The person in charge could not provide a food temperature measuring device.
    Correction: Obtain at least one food temperature measuring device so employees can properly monitor the temperature of food items in the establishment.
  • Critical: Equipment and Utensils - Hot Water and Chemical Sanitizing* (corrected on site)
    Observation: Due to improper operation of the low temperature chemical sanitizing mechanical warewashing machine, equipment food-contact surfaces and utensils are not sanitized after cleaning. (See 12 VAC 5-421-1700)
    Correction: Repair the unit to restore chemical sanitization. Verify the level of sanitizer and continually monitor by the use of test strips/kit. Operator agreed to use three compartment sink to sanitize using chlorine until unit is repaired-will fax invoice for repair of dishwashing machine to health dept. at 972-4310.

Generally, facility observed to be clean and well ordered. Person in charge knowledgeable about employee health policy. Foods observed being held at proper temperatures in storage and hot holding for service. Chlorine sanitizer in 3 compartment sink and dispensed from automatic dishwashing machine at proper concentrations of 100ppm.
  • Food - Miscellaneous Sources of Contamination (corrected on site)
    Observation: Potted plants stored over 3 compartment sink where produce can be washed and food contact surfaces cleaned and sanitized.
    Correction: Protect food from miscellaneous sources of contamination. Corrected by moving plants from kitchen area.
  • Lighting, Intensity
    Observation: Lights out in storeroom-observed less than 10 footcandles in storeroom
    Correction: Operator has work order in to repair lighting in storeroom.
