    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below. Operator moved to the walk-in cooler during the inspection.

    Observation: The food-contact surfaces of the following equipment were not observed sanitized: food pans the dishmachine rinse only sanitizing at 120.
    Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use. Asked operator to discontinue sanitizing in the dishmachine until repaired or wash in the machine and sanitize the three compartment sink. Repair man called during the inspection.
