Today's visit was to conduct a routine inspection of the seasonal snack bar. The certified food manager stated he just ordered more Quaternary Ammonium sanitizer for the 3-vat sink and it should arrive tomorrow. At that time I did remind the certified food manager to obtain a new test kit. In the mean time I discussed with the manager and his employees to use regular bleach as the sanitizer at the 3-vat sink. We set up the sink using the bleach he has on site so that if he fills the basin to the fill line, 2 capfuls of bleach is just the right concentration of bleach to sanitize at 50-200ppm.

  • Critical: Food Protection from Contamination / Package, Cover, Wrap (corrected on site)
    Observation: Unwrapped or uncovered food observed in several of the refrigeration and/or freezer units. Observed opened packages of shredded cheese and uncovered tortillas inside the True upright refrigerator. Observed an open bag of frozen pretzels inside the Supera 2-door freezer. Observed an open bag of lettuce inside the True 2-door upright refrigerator.
    Correction: Foods shall be protected from contamination by being stored in packages, covered containers or wrappings unless being cooled. DISCUSSED WITH MANAGER AND FOOD ITEMS WERE COVERED.
  • Sanitizer Test Kit Required (repeated violation)
    Observation: There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solutions of Quaternary Ammonium.
    Correction: Obtain a new Quaternary Ammonia test kit so you can ensure the concentration is at 150-400ppm to properly sanitize all equipment and utensils.
  • Nonfood-Contact Surfaces Clean at Frequency to Preclude Accumulation (corrected on site)
    Observation: The nonfood-contact surfaces of the following equipment had accumulations of grime and debris: 1. Floor inside the True upright refrigerator was unclean with food debris, 2. Flip top lid on the True reach-in refrigerator was unclean with food debris. 3. Floor inside the True 2-door upright refrigerator was unclean with food debris.
    Correction: Nonfood-contact surfaces of equipment and utensils shall be cleaned at a frequency necessary to preclude accumulation of soil residues. DISCUSSED WITH MANAGER AND STAFF WILL CLEAN OUT THE UNITS TODAY.

The purpose of this visit was to conduct a routine inspection. The True 1DR upright refrigerator is holding properly and was observed without any TCS (Temperature Control for Safety) foods today. Manager indicated that this unit is sometimes used for cream cheese. Pest control is conducted monthly. If you have any questions, please feel free to call (703) 246-2444.     Observation: Interior of ice machine was observed in need of cleaning.
    Correction: Surfaces of utensils and equipment contacting food that is NOT potentially hazardous (time/temperature control for safety food) such as ice bins, beverage dispensing nozzles, and enclosed components of equipment such as ice makers, cooking oil storage tanks and distribution lines, beverage and syrup dispensing lines or tubes, coffee bean grinders, and water vending equipment at a frequency specified by the manufacturer or at a frequency necessary to preclude accumulation of soil or mold.
