Manager showed record of temperature logs and assures employee know location. Inspector suggested to manager that the logs be kept on the units the temperature is being monitored for. Hair restraints were in place during time of re-inspection. A signed employee health policy is in place and employees are aware of reporting procedures. Inspector discussed other concerns with manager to which procedures are being put in place and will be reviewed at the next routine inspection.

Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

    Observation: The nonfood contact surface underneath the flat top grill (where grease drip pans are located) had accumulations of grime and debris.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

    Observation: Dishes were found stacked wet after cleaning and chemical sanitization.
    Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.

    Observation: Outer opening of the food establishment in back storage room is not protected against entry of insects and rodents.
    Correction: Protect the food establishment against the entry of insects and rodents by: 1. Filling or closing holes and other gaps along floors, walls, and ceilings

    Observation: Ventilation in both bathrooms is not sufficient to keep rooms free of excessive obnoxious odors.

    Correction: Ensure all employees wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food clean equipment, utensils, and linens, and unwrapped single-service and single-use articles.
