Only one noncritical violation had been addressed since the previous inspection. Food handler cards that were considered by the manager as valid are not through the approved website posted in the store. Inspector will make follow-up appointment and owner will be contacted to discuss issues that can be prevented in the future.

Manager was informed that she has until next routine inspection to renew certification and to have a second CFM to ensure that there is one present for all times that the operation is open for business. Follow-up will be to check that all employee have current FHC and have signed the 2013 compliant Federal Form 1-B and other critical violations.

Some employees have eFoodHandler cards which are not accepted by NDPH. Approve course is posted at time clock in employees view. Employees demonstrated food safety knowledge - have employees take new course when current expires. Only one CFM is registered for this store. Owner must ensure there is CFM coverage for all shifts while the kitchen is open for business. Good handwashing practices and cleaning practices observed during the inspection.
Permit was issued to CFM.

    Observation: A food employee failed to wash his hands before engaging in food preparation, after handling soiled utensils or after engaging in any activity which may have contaminated his hands.
    Correction: Instruct food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing task.

    Observation: Single-use gloves while worn during multi-tasked food preparation.
    Correction: Discard gloves when changing tasks and wash hands when changing from raw food to ready-to-eat (RTE) food preparation to prevent cross contamination. Single-use gloves shall be used for only one task such as working with RTE food or with raw animal food and used for no other purpose.

In addition, inspector spoke to CFM about new policy. Grace period for CFM re-certification will go away as of July 1, 2014. CFM must recertify before certificate expires.
