NOTE: Overall kitchen was clean and well organized. Great separate storage of chemicals separate and below foods and single-use items. Reminder that all employee beverages should have both a lid and a straw and be handled/stored in a manner that prevents contamination. Good job with hair restrained. Good job organizing coolers to store raw foods separate and below ready-to-eat foods. Left and explained washing hands with clean dishes and sanitizer poster. Recommend installing a splashguard between the hand sink and the drying rack in the dishmachine room. Discussed ensuring there is a different flipper or spatula used for flipping the partially cooked burgers than for removing the fully cooked burgers from the grill to help prevent cross-contamination.
Critical: Hands - Preventing Contamination from Hands* (corrected on site) Observation: Employees observed handling ready-to-eat (RTE) food with their bare hands.
Correction: Reminder that there should be no barehand contact with ready-to-eat foods such as burger buns, cooked pizza, etc. Left and explained NO barehand contact poster. Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands.
Temperature Measuring Devices Observation: There was no temperature measuring devices located in of some cold holding units. Place thermometers in the coolers in the warmest part (usually near the door).
Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature. Also, ensure there are metal stem probe thermometers available to check reheating, hot holding, and cooking temperatures throughout the day.

Correction: Store knive properly inbetween uses.
Cloths - Wiping Cloths - Use Limitation (corrected on site) Observation: Wiping cloth on back burger prep counter.
Correction: Store wiping cloths in sanitizer when not in use. Keep wiping cloths used for raw animal foods separate from other wiping cloths.
