Correction: Keep to closed to protect food from miscellaneous sources of contamination.

Observation: Observed food items such as tortillas stored in grocery disposable shopping bags after removing them from their original packaging.
Correction: Keep foods in original packaging or use food grade containers to store foods in.

Observation: Dish machine sanitizer concentration below the required 50 ppm.
Correction: Discontinue use of machine until machine can be repaired so that required concentration of sanitizer is present to sanitize dishes.

Observation: Several light fixtures are not operating in the kitchen, prep, grill and service areas.
Correction: Replace bulbs as needed or repair fixtures so there is adequate light for preparation and cleaning.

Correction: Store knife properly when not in use on clean portion of prep area and not inbetween equipment where it may be contaminated.

Observation: Interior top of ice machine apprears to have some mildew.
Correction: Clean and sanitize these surfaces for food contact as needed.

Observation: Grease accumulation within hood and it appears to be dripping on floor.
Correction: Clean hood and filters as needed.

Observation: Working containers of sanitizer under the dish machine are not properly labeled.
Correction: Working containers of toxic items are to be properly labeled with contents. Identification of these containers with the common name of the material helps prevent the dangerous misuse of the contents.
