    Observation: Foods in the prep cooler cold holding at improper temperatures.
    Correction: Cold hold potentially hazardous food at 41°F or below - corrected during inspection - PIC adjusted cooler on the spot.
  • Critical: Equipment and Utensils - Before Use After Cleaning* (corrected on site) (repeated violation)
    Observation: Food contact surfaces were observed being provided with a contact time of less than 60 seconds.
    Correction: Provide all food contact surfaces with a contact time of 60 seconds with the quat sanitizer.

    Correction: Cold hold potentially hazardous food at 41°F or below.

    Observation: According to the date mark the salami i should have been previously discarded.
    Correction: Promptly discard foods at the end of the seven day holding period.
  • Critical: Equipment and Utensils - Before Use After Cleaning* (corrected on site)
    Observation: A knife was observed being provided with a contact time of less than 60 seconds in the quat sanitizer.
    Correction: Provide all food contact surfaces with a minimum contact time of 60 seconds.

The receptor at the three compartment sink has been enlarged and the drain pipes extend and the drain pipes extend past the flood level rim of the receptor.
The plumbing at the espresso sink has been altered but is not provided with an air gap.
Provide indirect waste lines/eliminate the direct connection in between the sewage system and a drain originating from equipment in which food, portable equipment and utensils are placed.

    Observation: The faucet in the restroom leaks. Water is leaking at the water filter. Water is pooling on the floor at the three vat sink.
    Correction: Repair/adjust the plumbing system as needed.
  • Critical: Backflow Prevention*
    Observation: A sink intended for use with food equipment is direct plumbed.
    Correction: Provide indirect waste in between the sewage system and a drain originating from equipment in which food, equipment or utensils are placed.
  • Physical Facilities in Good Repair
    Observation: There is a gap in between the light fixture and the drywall.
    Correction: Repair as needed to close the gap.
