Routine
Employees are well trained and maintain a clean/organized facility. Employee health, hand washing ,and no bare hand contact with ready to eat foods was discussed. . Thank You.
Critical: Date Marking - Ready-to-Eat; Potentially Hazardous Food; Date Marking* Observation: The deli meat, sliced tomatoes, and homemade meat salads in the refrigeration unit are not properly dated for disposition.
Correction: Mark the name and ""consume by"" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

CFM has good knowledge of safe food practices. Reviewed food handler cards and discussed employee health policy. Discussed cooling and reheating methods for leftovers. Fully cooked foods used. Discussed glove use to handle ready to eat foods. No bare hand contact allowed. Wiping cloths stored in sanitizer at 300 ppm. Foil (to be changed daily) approved to cover opening on popcorn machine. Kitchen maintained clean and organized. Issued permit renewal. No violation noted during this evaluation.

Discussed the following with the PIC: 1. Discussed the in-use dispensing utensils storage and the cleaning frequency of the in-use utensils. 2. Monitor the Frigidaire reach-in freezer to ensure it is holding proper temperatures.
Cloths - Wiping Cloths; Use Limitation Observation: Wiping cloths improperly stored between use.
Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.
Gloves; Use Limitation Observation: Used single-use gloves observed being stored on the counter top.
Correction: Cease reuse and discard gloves when interruptions occur in the operation.
Sanitizing Solutions, Testing Devices Observation: There is no test kit located in the facility for monitoring the concentration of the QAT chemical sanitizing solution in the three compartment sink basin.
Correction: Obtain a QAT test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
