| Prior to issuing the permit, the following must be completed: clean all equipment, including the cooler mats. There is a "plastic" smell in the walk in. Replace broken and or chipped tiles. Resurface the storage shelves under the hood and increase the light in the storage area. Ensure all employees have food handler cards before they begin work. The 2013 Food code was discussed, as well as employee health, hand washing, and no bare hand contact with ready to eat foods. The owner must also obtain a three year CFM certificate.
