It is the responsibility of the certified food manager to ensure dishes are being washed and sanitized properly as well as ensuring the overall food safety program is in compliance. The dish machine needs to be checked daily. temperatures need to be checked regularly to ensure potentially hazardous foods are being kept at safe temperatures.

If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
