Observation: Observed the rinse temperature gauge to be not operating during the inspection.
Correction: Provide a functioning temperature measuring device at the rinse compartment so employees can routinely monitor the water temperature.
- Light Bulbs Protective Shielding
Observation: Light bulb in walk-in freezer by the door is not shielded, coated, or otherwise shatter-resistant.
Correction: Shield or replace light bulb with a coated or shatter-resistant bulb.
- Physical Facilities - Cleaning Frequency and Restrictions
Observation: The wall behind the pre-wash sink in the warewashing area, to include the sink caulking, is noted in need of cleaning.
Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

Discussed the above and the following with the person in charge: - Walk-in cooler was under repair during the inspection. An alarm signaled earlier in the morning and a repair company was notified. Ensure all foods are held at or below 41'F. Recommended to the PIC to set the unit temperature between 36'F-38'F. Observation: The following equipment food-contact surfaces were observed soiled to sight and touch: several food containers on the storage rack in the dishmachine area and two pizza slicers in the storage drawer. Items were placed at the dishmachine for cleaning.
Correction: Clean and sanitize these surfaces for food contact.

Facility overall clean and in good repair. Person in Charge placed a work order request for the air screen reach in coolers. Contact health department once coolers have been repaired or serviced.

Observation: Observed cartons of milk cold holding at improper temperatures in the air screens. Air screen on serving line 1 was cold holding milk at an internal temperature of 48'F. Air screen on serving line 2 was cold holding milk at an internal temperature of 45'F. A work order has been placed for the unit and no temperature control for safety foods, such as milk, will be stored in the air screen coolers overnight.
Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.

- Temperature - Food Temperature Measuring Devices - Provided
Observation: The Person in Charge could not produce an appropriate food temperature measuring device to verify cooking temperatures of thin foods such as meat patties or fish filets. Faciity must have a thin probe food thermomter.
Correction: A temperature measuring device with a suitable small-diameter probe that is designed to measure the temperature of thin masses shall be provided and readily accessible to accurately measure the temperature in thin foods such as meat patties and fish filets.
- Plumbing System Maintained in Good Repair
Observation: The faucet at the hand washing sink by the ovens is leaking.
Correction: Plumbing systems and components shall be maintained in good repair.

Discussed: Proofers are not designed to be hot holding units. Recommend replacing units with hot holding units to ensure foods maintain proper temperatures. Have a great summer.

Observation: Employees observed working in the food service area without proper hair restraints. Ensure that all hair including bangs are properly restrained.
Correction: Ensure all employees wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food, clean equipment, utensils and linens, and unwrapped single-service and single-use articles. This section does not apply to food employees such as counter staff who only serve beverages and wrapped or packaged foods, hostesses, and wait staff if they present a minimal risk of contaminating exposed food

Observation: The door gasket to the RICs on Line A and Line B are in poor repair.
Correction: Repair or replace the door gasket in accordance with the manufacturer's specifications.
