Reminder that all employee beverages should have a lid & straw (no canned beverages, screw tops, etc.) and be stored/handled in a manner that prevents contamination to food and dishware. Please work to ensure walls, floors, and ceiling are in good condition - smooth, easily cleanable, and nonporous -- corners are showing wear.
- Sanitizing Solutions, Testing Devices
Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions. The test kit available expired in 2013 and appears to have been dropped into water as it's changed colors.
Correction: Obtain a quaternary ammonium test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.

Good job with employees wearing hair restraints. Great job with there being thermometers near the door in both prep coolers. Good job arranging products in prep and walk-in cooler to allow air flow. Reminder - do not place things on top of the trash can and use this as storage. Have a trash can near the handwashing sink for paper towels.

Observation: Quaternary Ammonium sanitizing solution in the three-compartment dishwashing sink and being dispensed at the sink did not contain any sanitizer and was 0 ppm. Dishware was not being sanitized at all at the start of the inspection and the sanitizer test strip at the sink had never been opened or used.
Correction: Adjust the sanitizing solution to 200-400 parts per million or as otherwise instructed by manufacturer's recommendations. Regularly test the sanitizer concentration using the test strips. Ensure dishware and utensils are being properly washed, rinsed, sanitized, and air dried to help prevent foodborne illness.
- Plumbing System Maintained in Good Repair
Observation: The sink basin at the hand wash sink is slow to drain. Additionally, the three compartment sink is very slow to drain.
Correction: Plumbing systems and components shall be maintained in good repair. Have plumbing addressed so these sinks properly drain.

Observation: Employee medicines (antacids & other stomach/GI meds) were observed commingled in the kitchen above the slicer and above the three-compartment sink.
Correction: Employee medicines should be stored in a manner that prevents contamination of food, equipment, utensils, & single-use items. Also, employees should not be preparing foods when exhibiting vomiting, diarrhea, fever, etc.
