Shadow visit with Robert Watkins. Meeting with supervisor from riverside hospital and outgoing manager of Sadesco. Coordinated turn over of cafe to riverside hospital. Robert has excellent relationship with staff. He is very open to their concerns and thorough in his explanations and inquiring about their procedures. PIC agreed to place lunch meat, prepared salads, and sliced tomatoes on TPHC in front display cooler. Ice is used as a refrigerant and is inconsistent to ensure TCS foods are held at or below 41F. They will load from the true refrigerator located directly behind and use the display case as "display" immediate service. All food in display case will be discarded at the end of service. Observed the preparation of chicken salad that is packaged to sell in "Simply to Go" area. Observed personnel packaging chicken salad prepared the previous night and dispensed in containers. Product was cooling at 46F. The containers were then placed in the display cart and observed to be holding at 52F (after 45 minutes) in Simply to Go display. PIC used the blast chiller and after 10 minutes (or an hour after preparation) found to be at 32F. Recommend blast chiller used for all items needing to be chilled properly.
