All previous risk factor violations have been corrected. Dishwasher has been serviced and is dispensing sanitizer properly. A new refrigeration unit has been installed on the buffet and is holding foods at appropriate temperatures. New containers for the oatmeal condiments have been ordered, as well as a new thermometer for the milk unit. Eggs are being cooked in the oven and not in the electric frying pan.

A time control procedure was established for continental breakfast items.
All risk factor violations were corrected during inspection. Correct GRP violations as soon as possible.

Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

If the food is held at 41°F or below the food shall be served, sold or discarded within 7 calendar days or within 4 calendar days if held at 45°F. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
