Follow-up
This visit was made to conduct a routine food safety evaluation. A follow up inspection will be conducted in 10 days to check the hand sink. *repeat violations are subject to civil penalty*
Handwashing / Where to Wash Observation: A food employee was observed cleaning their hands in a food preparation sink or in a mop sink. (Employee reported that they are washing their hands in the bathroom hand sink adjacent to the kitchen area since the hand sink water is turned off for repairs to a leaky pipe)
Correction: Instruct food employees to clean their hands in a handwashing sink. Food employees may not clean their hands in a sink used for food preparation, or in a service sink or a curbed cleaning facility used for the disposal of mop water. (Repair the hand sink as soon as possible. The bathrrom hand sink may be used in the meantime so long as the food workers are careful to use a papertowel to open the bathroom door so as to not recontaminate their hands.)

Handwashing Sink / Refuse Container Required Observation: There is no refuse container at the area immediately adjacent to the kitchen hand sink.
Correction: If disposable paper towels are used at handwashing sinks, a trash can shall be located at each sink or group of adjacent sinks.
Wall / Ceiling Covering / Attached & Cleanable Observation: Materials used to cover the ceiling in the kitchen were attached in a manner that was not easily cleanable.
Correction: Wall and ceiling covering materials shall be attached so that they are easily cleanable.

Routine
Utensils That are In-Use / Between-Use Storage Observation: Scoops were observed with handles stored in direct contact with the sweets. This creates a risk when customers touch the sweets whilst retrieving the scoop.
Correction: Store scoops with handles away from the product.
Critical: Sanitizers, 21 CFR Criteria for Food Contact (corrected on site) Observation: The bleach solution at the three compartment sink was observed to be in excess of 200ppm chlorine.
Correction: Ensure that you use bleach at the correct strength (50-100ppm)
