Overall, the mobile unit is clean, well maintained, and in compliance with food regulations. The operator was able to appropriately demonstrate knowledge of food safety practices. The 3-compartment sink and hand washing sink are maintained in good repair. A permit was issued. No violation noted during this evaluation.

Routine
Pre-operational inspection revealed the following: Refrigeration temperature was lower than 40 F
Nonfood-Contact Surfaces - Corrosion Resistant/Nonabsorbent Observation: There were pieces of unsealed wood in areas where exposure to soiling/splashing could occur.
Correction: Any untreated wood that is exposed to soiling /splashing is to be sealed or removed.
Drainboards Observation: Racks were not provided in a location where they can be used to accommodate all soiled and cleaned items.
Correction: Provide racks close to the 3-compartment sink so that all cleaned and soiled utensils and equipment can be properly stored as they accumulate during operation.
