One new hire need food handler card. Copy of food handler class schedule left on site. Manager informed me that True reach-in has been frequently opened this morning. Manager attempted to adjust gauge on unit. Informed manager to monitor unit, record temperatures on daily temperature log for all refrigeration units. Manager signed up for Serv Safe food manager course. Informed manager that Serv Safe certificate will have to be transferred over to a Norfolk food manager certificate. There is a $10.00 transferring fee. Observed hot plate in back area. Informed manager that all cooking equipment have to be under proper ventilation system.
