    Correction: PIC is to advise employees of their responsibility to report in accordance with law information concerning their health and activities as they relate to diseases transmitted through food.
  • Temperature - Food Temperature Measuring Devices - Provided
    Observation: The person in charge could not provide a food temperature measuring device adequate for cold holding TCS foods .
    Correction: Obtain at least one food temperature measuring device so employees can properly monitor the temperature of food items in the establishment.
  • Equipment - Fixed Equipment, Spacing or Sealing
    Observation: Kitchen counter and manual washing sink is not sealed to adjoining wall.
    Correction: Seal the unit to adjoining equipment or walls since it is exposed to spillage or seepage.

    Observation: Single--use articles (plastic forks) not handled, displayed, or dispensed so that the food- or lip-contact surfaces are protected from contamination

The operator provided a metal probe thermometer, quaternary ammonium test strips and an Employee Health policy was available and discussed at this time. Calibration of the probe thermometer was also discussed during today's inspection.
Foods that are sent to the room for service are never kept and reserved.

    Observation: A food employee was observed cleaning their hands in a food preparation sink or a sink used for utensil washing.
    Correction: Instruct food employees to clean their hands in a handwashing lavatory. Food employees may not clean their hands in a sink used for food preparation or utensil washing.
  • Handwashing - Using a Handwashing Lavatory - No Other Purpose (repeated violation)
    Observation: The handwash station in the kitchen was observed being used to rinse foods ( apples).
    Correction: The handwash facility identified above is to be used for washing hands only
