Discussed proper cooking, cold and hot holding temperatures. Temperature posters provided. Bleach is available for use as sanitizer. Obtain test kit and ensure proper concentration of 50 - 100 ppm. FDA 1-B form provided. There was no food in the facility at the time of inspection.

| Pre-opening inspection conducted. No food in the facility yet. Food will be purchased at Cosco and SAMs Club. Adequate refrigeration, thermometers, food thermometer and chemical test kit. Reviewed cooking temperature for hamburgers, employee health policy and hygiene. Facility has 2 compartment sink for wash and rinse purposes, and plastic container with sanitizing solution. Hands will be washed in the bathroom. Bathrooms were closed during inspection and not inspected. Bathrooms must be supplied with soap, hand towels and hand washing sign.
