| Discussed the following with the person in charge (PIC): 1. Approved sources for raw shell eggs. The EHSS gave the PIC information regarding small egg producers and the requirements for using these eggs in the restaurant. 2. Food sources are Liberty Creek Farm (chicken). Liberty Creek Farm is a small producer that sells less than 1,000 birds per year that are raised on the company's farm. Observed the chicken labeled with the company name, weight of the chicken, date it was processed, and the safe handling instructions. Other food sources are Pink House Farm (pork) that is processed under USDA inspection, local farmers (produce), Bombolini Pasta, Dragonfly Farms, The Virginia Chutney Co. and Restaurant Depot. Eggs are currently purchased from the local grocery store. 3. Ensure that the hot water at the 3 compartment sink is reaching a minimum temperature of 110°F.

The dishwashing machine was not operational at the time of inspection and the PIC stated that it is being replaced. All equipment, dinnerware, & utensils are being washed and sanitized in the 3 compartment sink. 3. Food sources are Liberty Creek Farm (chicken).
