Discussed the following with the person in charge (PIC): 1. Ensure all foods are cooled using the proper methods. Observed several food items cooling in ice baths during the inspection but other foods prepared early today were not cooled properly. 2. Food sources are Sysco, PFG, & Concept Foods. 3. The head chef was very knowledgeable of food safety concepts. He recently completed the ServSafe course and is awaiting his test results. Recommend that the general manager of the restaurant also attend an accredited food safety course. Observed good hot and cold holding temperatures of foods.
