Discussed the following with the person in charge (PIC):
1. Ensure all foods are cooled using the proper methods. Observed several food items cooling in ice baths during the inspection but other foods prepared early today were not cooled properly.
2. Food sources are Sysco, PFG, & Concept Foods.
3. The head chef was very knowledgeable of food safety concepts. He recently completed the ServSafe course and is awaiting his test results. Recommend that the general manager of the restaurant also attend an accredited food safety course.
Observed good hot and cold holding temperatures of foods.
  • Critical: Cooling* (corrected on site)
    Observation: Queso sauce was not being adequately cooled to prevent the growth of harmful bacteria. The two containers of queso sauce stored in the walk-in cooler were observed at a temperature of 110° after 2. 5 hours into the cooling process. The person in charge (PIC ) discarded both containers of queso sauce.
    Correction: Cool potentially hazardous foods from 135°F to 70°F within 2 hours and within a total of 6 hours from 135°F to 41°F. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses.
  • Handwashing - Using a Handwashing Lavatory (corrected on site)
    Observation: The handwashing sink located on the cook's line is blocked, preventing access by employees for easy handwashing.
    Correction: Access to the handwashing facility identified above is to be available during all hours of operation. Remove the table preventing its use.
