  • Critical: Equipment and Utensils - Hot Water and Chemical Sanitizing* (corrected on site)
    Observation: Did not observe sanitizer concentration for the front retail counter.
    Correction: Provide QAC at proper concentration of approximately 200 ppm and immerse or expose food contact surfaces to sanitizing solution for adequate time.
  • Handwashing Lavatory, Water Temperature, and Flow
    Observation: Water from the handwashing sink in the restroom was measured at a temperature less than 100°F.
    Correction: Make necessary adjustments to valves and lines serving the handsink to provide water of at least 100°F to allow more effective removal of fatty soils encountered in kitchens.
  • Critical: Sanitizer; Criteria/Chemicals for food contact* (corrected on site)
    Observation: QAC being applied to food contact surfaces does not meet the requirements of 21 CFR 178.1010. Observed sanitizer spray bottle concentration >400 ppm.
    Correction: Utilize only QAC that meet the requirements of 21 CFR 178.1010 when applying to food contact surfaces

    Observation: Containers of Windex Cleaner are not properly stored to prevent the contamination of food, equipment, utensils, linens or single service items.
    Correction: Containers of Windex Cleaner must be located in an area that is not above food, equipment, utensils, linens or single service items.
