    Observation: Panko trash bags observed in use and are not food grade storage containers.
    Correction: Maintain food storage in food grade approved containers.

    Observation: Food stored in a location where it is subject to splash, dust or other contamination. Observed hot holding equipment for use outside in the patio area.
    Correction: Facility is not approved to have food/beverages outside. Store food where it is not exposed to splash, dust, or other contamination to prevent contamination.
  • Critical: Reheating for Hot Holding* (corrected on site)
    Observation: The Chicken/Beef Gumbo was not reheated to a sufficient temperature and time to eliminate pathogenic bacteria.
    Correction: Ensure potentially hazardous foods that are cooked, cooled, and reheated for hot holding are reheated so that all parts of the food reach 165°F or above for 15 seconds. Food shall be reheated within 2 hours.

    Observation: Chicken/Beef Gumbo observed hot holding at improper temperatures.
    Correction: Discard the food and ensure that potentially hazardous foods for hot holding are maintained at 135°F or above to inhibit the growth of harmful bacteria.

    Observation: Did not observe sanitizer available behind the front counter.
    Correction: Provide Bleach at proper concentration of 100 ppm and immerse or expose food contact surfaces to sanitizing solution for adequate time.

    Observation: Different types of raw animal foods stored in such a manner that may cause cross contamination. Observed raw ground beef stored above raw whole muscle pork product.
    Correction: Separate types of raw animal foods from each other such as beef, fish, lamb pork, and poultry during storage, preparation, holding, and display by the following: (a) Using separate equipment for each type. (b) Arranging each type of food in equipment so that cross contamination of one type with another is prevented. (c) Preparing each type of food at different times or in separate areas.

    Observation: Foods not properly labelled. Dry storage containers observed in need of labelling with indicated food products.
    Correction: Foods, whether packaged from the provider,packed within the establishment,or contained in working containers are required to conform to specific labeling laws.

    Observation: Observed exposed wood in the napkin and sauce storage closet. Supportive beams for the bottom shelf are observed unsealed.
    Correction: Seal exposed wood.

    Observation: Observed accumulations of grime and debris on the following food contact surfaces: internal components of ice bin and various surfaces of the slicer.
    Correction: Clean and sanitize these surfaces for food contact.

    Observation: Outer opening of the food establishment is not protected against entry of insects and rodents. Observed patio door and front door in need of a door sweep. Front door is also observed in need of additional weather stripping on the door frame.
    Correction: Protect the food establishment against the entry of insects and rodents by: 1. Filling or closing holes and other gaps along floors, walls, and ceilings
