Cooked pizza held for 20 minutes in customer service area, if not sold then discarded. .Observed hand washing and glove usage. Test strip for dishwasher +160 degrees. Observe rinse water temperature in Dishmachine above 180-194 degrees. All utensils and dishware are cleaned and sanitized in 3 basin compartment sink and then placed in Dishmachine for further washing/rinsing.
