The PIC printed a copy of the policy and it was placed into the establishment file. 2. In use utensils (spatula, pizza cutter, tongs) are cleaned and sanitized at least every 4 hours. 3. All foods are received precooked and then reheated for hot holding. Observed excellent handwashing and glove usage by the foodhandler. NO VIOLATIONS. Very clean well organized establishment. New items: chicken wings and tenders, precooked kept frozen until cooked. Pizza oven used to cook chickens tenders, convection oven used to cook wings both to 165 degrees or higher for 10 seconds. Good date marking on pizza for time (2 hours or less discarded if not sold). Wings and tenders alsohot held for 2 hours and then discarded if not dispensed. Good trash storage and handling-- interior door leading to enclosed dumpster, vehicle then picks up trash from enclosed dumpster. Bakery inspected by VDACS.
