Food handling practices and personal hygiene very good. All staff appear healthy, good hand washing procedures observed as well. Maintain a routine cleaning schedule for equipment and facility.
  • Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils (corrected on site)
    Observation: Observed accumulations of food deposits or other soil on the following food contact surfaces: Inside of whirlpool refr. and oven.
    Correction: Clean and sanitize these surfaces for food contact.
  • Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils (corrected on site)
    Observation: Observed accumulations of dust, dirt, food residue or other debris on the following nonfood-food contact surfaces: Cabinet under three compartment sink and cabinet immediately to the left and adjacent to it.
    Correction: Maintain nonfood-contact surfaces of equipment clean.
  • Physical Facilities - Cleaning Frequency and Restrictions (corrected on site)
    Observation: The wall behind the counter holding the crocks and microwave oven and the floor under counters, shelving units, equipment and work table in the kitchen noted in need of cleaning.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

Previous hazards corrected. Facility small but well kept. Good use of gloves and utensils to prevent bare hand contact with ready to eat foods. Sanitizing solutions at proper levels. No hazards noted today, good job.

Observed end of lunch. Good clean up once it was completed.
Discussed handwashing and prevention of barehand contact.
Discussed cooling and set up an ice water bath for one soup and the other was set in a shallow pan and loosely covered on the top shelf of the refrigerator.

    Observation: Observed employee slicing a tomatot in a manner that does not prevent potential contamination.
    Correction: Minimize bare hand and arm contact with exposed food that is not in a RTE form to reduce the potential for contamination.
  • Handwashing - Using a Handwashing Lavatory (corrected on site)
    Observation: The handwashing facility located in the kitchen is blocked, preventing access by employees for easy handwashing.
    Correction: Access to the handwashing facility identified above is to be available during all hours of operation. Remove the kitchen preventing its use.

The fridge does appear to be working, though lowering the temperature may help with it being opened and closed often during preparation.
Discussed cleaning and sanitizing. Make sure that soap bubbles are fully rinsed off of items before placing into the sanitizer after being washed.
Good job keeping the facility clean. Cleaning is done after breakfast and after lunch to keep any build up from occurring.

Observed clean up from breakfast. Casseroles have already been put together for lunch, but baking had not started.
Good temperatures observed. Good cleaning and sanitizing observed.

  • Ventilation - Mechanical Ventilation
    Observation: Ventilation is not sufficient to keep rooms free of excessive steam and/or vapors.
    Correction: Provide mechanical ventilation that is sufficient enough to keep rooms free of excessive heat, steam, condensation, vapors, obnoxious odors, smoke and fumes. Venting to the outside as recommended by the building official is a solution.
  • Personal Care Items - Storage (corrected on site)
    Observation: Personal care items stored in such a way that they could contaminate food or equipment.
    Correction: All personal care items, medicines and first aid supplies must be stored in such a way to prevent potential contamination of food, food contact items, equipment, utensils, linens, single-service and single-use articles.

Kitchen has been moved upstairs. The kitchen has much more room and can be closed off from the rest of the facility. The new dining room also can be closed off from the rest of the facility.
No violation noted during this evaluation.
10/03/2013Pre-Opening
Discussed keeping the cat out of the kitchen that serves the public.
Only meals being done are with book club meetings.
Soups and salads have been the menu.
Discussed switching the kitchen to the one upstairs. This would provide better control of keeping the cat out of the kitchen.
Please turn in a plan review for this change. Floor plan, menu, and a $40 fee are required. Then an inspection will need to be conducted when the kitchen is ready.
