Only issue today is the make table. As noted in the violation section, only the far right top section of make table has the motor compartment under it instead of the make table refr. Could feel a great deal of heat rising from the back of the top right table top section. An exhaust fan built into the motor compartment has been disconnected and is not functioning. When the front panel of the motor compartment was removed the air temperature of the top right table top section dropped approx. 10 degrees in 5 minutes. I think getting the exhaust fan back on line and possibly insulating the bottom of the top right make table section will make big difference, the hot air must be moved from under the cooling compartment(top right make table section). Discontinue use of the far right top section of the make table untill it is repaired and capable of holding foods at or below 41Deg.F.

Discussed employee health and hygiene. Good handwashing observed. Very few items would go on a sandwich after it has been heated. Recommended use of tongs over gloves due to how few there are. Manager noted need for paper towels at handsink and got a new roll. Keep an eye on this as it needs to be replaced quite often. Employee could not find single use gloves for handling of ready to eat foods. Discussed other options deli paper and tongs. Employee used deli paper. Recommend having tongs for tomatoes, lettuce, and other items added to a sandwich after it comes out of the oven. Facility has a good cleaning schedule as the majority of the facility is very clean.
