- Equipment - Good Repair and Proper Adjustment
Observation: Areas of the front customer counter top are worn out , on the "kitchen side" of the front counter, exposing rough surfaces that are no longer cleanable, at the bacterial level.
Correction: The section of the counter top, which supports the soft drink dispenser unit, and is above the packets of taco sauce and other packets of condiments, needs to be replaced. There are areas of "particle board" exposed, where the smooth counter top surface has worn through to the particle board below. We require that all areas of the counter tops be smooth, moisture resistant, durable, and easily cleanable at the bacterial level, at all times. This repair needs to be completed, prior to renewal of the permit, on, or before 31-Oct-2016. Any ply wood used in completing this project must be sealed or painted.

Observation: The gasket around the entrance door to the ice bin, of the big ice machine, is torn.
Correction: We require that all equipment be kept in good repair at all times. This gasket needs to be replaced.

Dishwashing facilities were being maintained properly.
- Critical: Employee Health (corrected on site)
Observation: The manager-on-duty was not able to show us, in a verifiable manner (such as having employees sign a written agreement) that all employees, who may work with food, at this site, are aware that, if they themselves, or a member of their household, is diagnosed with E. coli, Shigellosis, Typhoid Fever, Hepatitis A, or Noroviruses, then the employee is required to report this to their supervisor.
Correction: We covered the "employee health screening" regulations, at length, with the manager on-duty. We provided a form taken from the FDA food code which may be used to verify that employees have signed such an agreement.
- Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
Observation: The guacamole dip, was "out of temperature," in the pan, in the taco assembly area, on the side that is nearest to the 3-compartment sink. This guacamole dip was at 50 F.
Correction: When a potentially hazardous food goes out of temperature, that is above 41 F, it is critical to know when that food went out of temperature. Potentially hazardous foods must be eaten, or discarded, within 4 hours of going out of temperature, or there is a risk of foodborne illness. This pan of guacamole dip was immediately discarded by the establishment management. This corrected the violation.
- Handwashing Cleanser - Availability (corrected on site)
Observation: There was no handwashing soap at the handwashing sink at the drive-in window.
Correction: We require that there be handwashing soap at all handwashing sinks at all times. This violation was immediately corrected by obtaining a pump-bottle of handwashing soap, and placing it at the drive-in window handwashing sink.
