- Critical: Equipment and Utensils - Before Use After Cleaning*
Observation: The mechanical dishwasher was getting no detectable sanitizer associated with the final rinse step (the sanitizing step) of the mechanical dishwasher.
Correction: We require that the available chlorine level associated with the final rinse step of the mechanical dishwasher be 50 to 100 ppm, as measured by the test strips for bleach-type sanitizers. Until the mechanical dishwasher is again sanitizing properly, all items must be sanitized manually by immersion in sanitizer using the three compartment sink, following the wash and rinse steps of the mechanical dishwasher cycle.. A service call was placed immediately by the establishment management to correct the problem. We require that the establishment call us, and leave a message, once the mechanical dishwasher is again sanitizing properly.

- Jewelry - Prohibition
Observation: An employee working behind the bar was wearing a ring with a stone in it.
Correction: The only ring that may be worn on the fingers while working with food, including in the bar area, is one plain wedding band. No rings with stones or rough surfaces are allowed.
- Hair Restraints - Effectiveness
Observation: An employee was observed in the kitchen working with food without wearing a hair restraint.
Correction: We require that all employees working in the kitchen wear a hat, an open visor, a scarf, a hairnet , or some other type of hair covering that we require. This violation was immediately corrected by the establishment management.
- Critical: Hands - Preventing Contamination from Hands*
Observation: A worker in the kitchen was observed contacting deli style turkey with bare hands.
Correction: We do not allow bare hand contact with ready-to eat foods. Use disposable gloves, tongs and spoons. This violation was immediately corrected by the establishment management.
- Handwashing - Using a Handwashing Lavatory - No Other Purpose
Observation: There was a paper lid in the bar handwashing sink.
Correction: Handwashing sinks may be used for no purpose other than handwashing. This violation was immediately corrected by the establishmnet management.
