Temperature Measuring Devices (repeated violation) Observation: There was no temperature measuring device located in the refrigerator used to store breakfast items for the continental breakfast.
Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
Critical: Equipment and Utensils - Before Use After Cleaning* (repeated violation) Observation: There is no onsite chemical sanitizer for the sanitizing of drink pitchers and utensils used for the continental breakfast area.
Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use. Instructed the manager on the proper use of chlorine to sanitize and how to obtain test strips and chemicals.
Equipment, Utensils, Linens, and Single-Service and Single-Use Articles (repeated violation) Observation: Single service items observed stored on the floor in the dry storage area.
Correction: Store single service items in its original protective packaging or inverted in an approved dispenser at a minimum of 6" above the floor.
