  • Equipment - Good Repair and Proper Adjustment
    Observation: Observed spray nozzle at 3 compartment sink in disrepair.
    Correction: Replace or repai spray nozzle at 3 compartment sink.
  • Handwashing - Using a Handwashing Lavatory (corrected on site)
    Observation: Back hand sink observed blocked by mop handle.
    Correction: Ensure hand sink is accessible for hand washing by employees at all times.
    A handwashing sink shall be maintained so that it is accessible at all time for emplyee use.
  • Floors, Walls, and Ceilings - Cleanability (repeated violation)
    Observation: Observed wall under handsink unsealed.
    Correction: Seal wall under handsink.
  • Handwashing Cleanser - Availability
    Observation: Soap was not provided at the hand washing lavatory at the back handsink
    Correction: Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.
  • Hand Drying Provision
    Observation: Observed no hand drying towels at the back or middle handsinks.
    Correction: Ensure individual, disposable hand towels are provided at each handsink.
  • Critical: Toxics - Storage of Toxic Containers*
    Observation: Spray bottles container cleaners observed stored directly adjacent to clean dishes, pans and food contact equipment.
    Correction: Keep chemicals physically separate from foods and equipment.

Substantial compliance with the Virginia Food Regulations as observed on this date. Recommend for annual permit. Permit was issued on 10/19/2015. Discussed reheating of any meat balls that were cooled down from the previous day to 165 F prior to hot holding at 135 F. Discussed proper cooling techniques and employee health standards / proper disposable food-service glove use with the owner.
  • Floors, Walls, and Ceilings - Cleanability
    Observation: 1) Floor tile under three compartment sink does not appear to be sealed to the floor. 2) Wall board underneath the middle room hand sink is not firmly sealed to the wall, 3) Some areas of the cove base at the floor / wall juncture require sealing to the wall to facilitate cleaning and to deny possible insect habitat.
    Correction: Owner was shown all three areas and agreed to make corrective actions.
