Overall the facility is doing a good job complying with the Virginia Food Code regulations. The restaurant has been well maintained and the person in charge is using good active managerial control. Discussed employee health, serve safe certification plans, cooling processes, and thermometers with the person in charge. Left some educational materials so the manager can do some training with the staff.
Critical: Food - Potentially Hazardous Food - Cold Holding* Observation: Observed the thai chicken in the undercounter preptop cold holding at improper temperature of 46 and sliced cheese in the preptop at 44.
Correction: The chicken had been in the unit overnight so the chicken was voluntarily disgarded. The sliced cheese was moved to the walk in cooler to bring down to temperature. Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria.
Critical: Ready-to-Eat - Potentially Hazardous Food - Disposition* (corrected on site) Observation: The commercially processed ready-to-eat (RTE) two sauces in the walk in cooler was not discarded by the ""consume by"" date. The sauces were supposed be discarded by 1/28/16 and 1/29/16.
Correction: Discard the food at this time and ensure all commercially processed RTE food is served, sold or discarded by the ""consume by"" date after opening. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
