Kitchen clean. Handsinks stocked. Employees observed washing hands and wearing gloves when handling ready to eat foods. Employee health policy available. Proper date-marking observed. Good food/equipment temperatures observed. Discussed the following with manager: always insure that sanitizer is available at proper concentration in 3-compartment sink and wiping cloth buckets. At time of inspection, no sanitizer available. Container was changed and auto-dispenser was dispensing at a concentration above 500ppm QT (must maintain 150-400ppm). Service order was placed approximately 2 weeks ago. In order to continue to use this dispenser, sanitizer must be diluted and tested daily until proper repairs are made.
Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness* Observation: Quaternary Ammonium sanitizing solution used was not at an acceptable concentration. Must dilute and test daily to insure proper concentration.
Correction: Adjust the sanitizing solution to 150-400 parts per million or otherwise identified by manufacturer's recommendations.

Facility currently under construction. Noted the need to seal all sinks to the walls. Proper wall, floor, ceiling coverings observed. Revisit on 9/10/15. No violation noted during this evaluation.
