NOTE: Great job date marking! Good job labeling spray bottles holding liquids. Kitchen appeared clean and organized. Please ensure that all cold holding units have accurate, visible thermometers in the warmest part of the cooler (usually near the door). Reviewed proper manual dishwashing and discussed the need for employees to wash hands prior to handling clean/sanitized dishware. There really should be a hand wash sink at or very close to the three-compartment sink. Left January 2015 ServSafe foodhandler class handout. Reminder - hands should be washed with soap for a full twenty (20) seconds, then be rinsed, and then be dried with a single-use paper towel.
  • Lighting, Intensity (repeated violation)
    Observation: The lighting in the walk-in cooler is very dim as a flashlight was needed to check date marking and take temperatures of items in walk-in cooler.
    Correction: Having poor lighting can encourage staff to hold door open for periods of time (which warms up cooler) to be able to see items in cooler. Please add additional lighting to this cooler. At least 10 foot candles 108 lux at a distance of 30 inches above floor is required for walk-in refrigeration units.

NOTE: Observed good date marking throughout the store. Good separate storage of chemicals away from food. Discussed ensuring NO clean dishware or to-go containers are stored under papertowel dispenser to prevent contamination. Reminder that ALL cold holding units must have an accurate temperature measuring device at the warmest part (usually near the door).
  • Critical: Food - Potentially Hazardous Food - Hot Holding* (corrected on site)
    Observation: Meatballs were observed hot holding between 116-129 degrees F. on the serving line.
    Correction: Hot holding is 135 degrees F. or above. Use a calibrated probe thermometer & make sure meatballs are reheated to the correct temperature as well as properly held hot *Corrected by reheating to 165 degrees F. during inspection *
  • Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness* (corrected on site)
    Observation: Both the wipe rag bucket and three-compartment sink, which had dishes soaking, were found to have 0 ppm or no detectable level of sanitizer.
    Correction: Regularly use test strips to monitor sanitizer strength - per manufacturer's instruction on your sanitizer, it should be between 200-400 ppm & dishes must be soaked. * Corrected during inspection to 400 ppm.
